Lemon and Courgette Drizzle Cake
I’ve already got one recipe on here for a Courgette, Lemon and Yogurt Drizzle cake, but this one doesn’t have Yogurt in it like the other one (as I haven’t got any in the fridge today). Very quick to make and only takes around 30 minutes to cook in the oven. I had the oven on to make dinner for the family – Jacket Spuds, and Courgette Eggy Pie (Quiche to all but my family)- so thought that I’d knock a cake up quick for a picnic tomorrow.
Cake Recipe
4 oz melted butter
4 oz sugar
Grated zest of 2 large lemons
2 eggs
8 oz grated courgette (yellow ones are fab as they look like lemon rind in the cake)
8 oz self raising flour
1 tsp baking powder
- Add it all into a mixing bowl and give it a good stir.
- Pop it in an 8″ square baking tin – I used my trusty silicon one in a metal one for stability (fab as it doesn’t need greasing)
- Put it into a preheated oven at 180c for 30 minutes or until skewer comes out cleanly.
Icing
Juice of one large lemon
3 oz Castor sugar
- Leave the hot cake in it’s tin and prick it all over with the skewer.
- Give the icing a quick mix and pour it all over.
- Wait until the cake is fully cooled before taking it out of the tin.
