Courgette Soup Recipe

I remembered another trusted Courgette Glut faithful today, Courgette Soup!   I had 8 extra people for an impromptu lunch and only half a loaf of bread….. Divine inspiration kicked in and with the help of a Wild Garlic Focaccia in the freezer, speedily defrosted and popped in the oven to warm up and a few spuds and a courgette, lunch for 13!

I tend to be a chuck it in and see what happens kind of a cook, so here is a very rough and ready recipe.

Courgette Soup

1 slightly large courgette, chopped into 1″ cubes roughly

1 large onion, chopped roughly as well

3 medium sized potatoes, peeled and chopped

1 oz Butter

1 pint of water

1 tbs vegetable stock

2 heaped tsp dried Oregano

2 heaped tsp dried basil

1 oz of cheese (I just use bog standard

Salt and pepper to taste

Soften off the onions, courgette and potatoes in the butter for a few minutes

Pour in the water, add the stock, herbs and seasoning.   Cook for about 15 minutes and then blitz in a food processor.  Add the cheese and serve.
