Courgette Bread

I found this recipe a couple of years ago, and have made many a loaf without my girls realising that there is courgette hidden in there!  It only uses up 8 oz, but when you are in the middle of a glut, anything helps!  I use a bread machine, but the recipe works with a normal bread making method.BREAD

130mls warm water

1 1/2 tsp yeast

1 1/2 tsp granulated sugar

100ml warm milk

1lb 1 oz white bread flour

4oz wholemeal bread flour

2oz butter

8oz grated courgette (it doesn’t need peeling or anything, just grate it in)

5tbsp seeds (your choice)

2tsp salt

I normally mix the water, yeast and sugar and let it start bubbling before I add the other ingredients.

Then just let the bread machine do its wonders, or take out all your frustrations on the bread and courgette!  Amazingly this does works well with sweet or savoury fillings – even Courgette and Ginger Jam!

    Yay, thanks for the courgette bread recipe! I’ve got 2 in the fridge, another 2 on the plant, we’ve just eaten chicken and courgette curry with courgette & mushroom baji and I gave away a small marrow today!
