Courgette or Marrow and Ginger Jam Recipe

A couple of years ago I was in the middle of a glut, and had a dim and distant memory of my Granny making marrow and ginger jam.  It’s quite sad, but when I found a recipe for it, I was over the moon!  I’ve made this with marrows, courgettes, squash and even one of my Dad’s own Squarrow.

1 lb marrow, peeled, seeded and cut into 1cm dice.

1 lb sugar

3 tbs lemon juice

3 tsp ground ginger

Put the marrow and sugar into a pan, mix it up and let it sit overnight so that the juices flow.

I then partially blitz the fruit so that it’s a smoother jam and then cook it up as a normal jam.  Add the ginger and lemon juice,  you can use real ginger rather than powder, but the powder was what my granny used, and if it was good enough for her, it’s good enough for me.

Carry on as with a normal jam.   Of all the jams that I’ve made, this is one of the most temperamental I’m afraid, but quiet yummy.
