Jackie’s Courgette Slice

A good friend is in the same predicament as me, in that she has courgette’s coming out of her ears too!         She gave me a lovely recipe that is gluten free, vegetarian and super tasty!





3 medium sized courgettes, washed and grated

1 medium onion, finely chopped

1 clove of garlic, chopped into small pieces.

1/2 oz butter

4 oz cheese, grated

2 medium eggs

4 oz oats

Salt and pepper to taste

A good sprinkle of dried or fresh basil/ oregano, or whatever takes your fancy!

1 tbs parmesan (I leave this bit out as I’m not all that keen on the stuff)


Preheat the oven to 180 degrees C

Melt the butter in a frying pan and sweat off the onions, garlic and courgettes for a few minutes.

Add the rest of the ingredients bar the Parmesan, give it a quick stir and then put into a lightly greased baking tray.  (I use a 8″ square silicon tray, in a metal tray.  The silicon tray means that I don’t actually have to grease the thing as it is super non-stick, and the metal tin gives it some stability when you are getting it in and out of the oven.)

Sprinkle on the Parmesan and pop it in the oven.

Cook it for around 30 mins or until a little golden and set to touch.

You can either have this hot or cold, it’s delicious either way.  We’ve had this as a main course, and taken it places as a snack – the world is your oyster as it were!
