Sweet Cucumber Pickle Recipe

My mother-in-law made this a few years back, and it became invaluable a couple of years ago when my Dad started growing cucumbers in a poly-tunnel and had so many cucumbers that they couldn’t eat them quick enough.  It’s super delicious in sandwiches: with cold meats: on its own straight out of the jar etc etc; and if you have some syrup left over, its nice as a salad dressing.

3 Large cucumbers

2 Large onions

2 oz salt

1 pt cider or clear vinegar

1 lb granulated sugar

1/2 tsp ground turmeric

1/4 tsp ground cloves

1 tbs mustard seeds


Slice the cucumbers and onions, pop them in a bowl – a layer of vegetables, a sprinkling of salt, a layer of vegetables etc etc.  Leave them to stand under a weighted plate for at least 3 hours so that most of the excess moisture drains out (can be over night if you don’t have enough time to do it all in one day)

Sterilise some bottles – you’ll have to guess-timate how many you need depending on the size of your cucumbers.   I normally get two more than I think that I’ll need, rinse the jars, and put them in the oven at 100 C for the length of time it takes to do the next couple of steps.

Pour out the liquid in the bowl and rinse the cucumber and onion well.

Put the vinegar, sugar and spices into a large saucepan, dissolve whilst stirring and bring to the boil

Add the cucumber and onions and boil for 1 minute

Quickly remove the seeds, cucumbers and onions and put them in the sterilised jars – I use a jam funnel and a ladle to make life simpler

Boil the vinegar and sugar for a firther 10 minutes to reduce it down to a thicker syrup

Pour it over the jarred veggies and seal (ideally with a metal lid as the clear jam covers don’t tend to store for as long or as well.)  Leave it for a couple of weeks – if you can- for the flavours to enhance.  This will keep for at least a year if you have prepared your jars well, and keep in a cool place out of direct sunlight.
