Tomato and Courgette Soup

My daughter had a lovely recipe book from her Granny the other day, Annabel Karmel‘s “My Favourite Recipes” and since then has been desperate to make the Tomato soup recipe.  We had the time today, but not the vital ingredient of carrots.  So, with the help of my daughter, Annabelle and husband Wil, this is what we came up with.

Ingredients – serves 4 (well 2 adults and 4 children)

1 onion – finely chopped

1 red pepper – finely chopped

1 courgette, peeled and grated

1 tbsp olive oil

14 oz carton/can of tomatoes

3 tbsp tomato puree

3 tbsp tomato ketchup

10 shakes of dried thyme (or fresh if you’ve got it)

250 mls vegetable stock

salt and pepper to taste

4 tbsp cream (we used the top of the milk)



Sweat off the onions and peppers in the olive oil for about 5 minutes, add the other ingredients and cook for a further 5 minutes.

Blend the soup until it is smooth and enjoy with some bread and butter, Courgette bread if you’ve got some!!
