Annabel Karmel’s Courgette and Raisin Muffins (in old money)

My sister pointed me towards this recipe last year.  It’s quick and easy, and very tasty.  I cook in lbs and oz,  and get a bit confused with metric, so here it is written up in imperial for those like me!  Oh, and I’ve made it not quite as healthy as I tend to do recipes with stuff that I have in my store cupboard, and I don’t have wholemeal self-raising flour as a norm, just the usual stuff.

4.5 oz soft brown sugarCourgette-and-Raisin-muffins-484x363-top

3 oz melted butter

1 egg

7.5 oz Self raising flour

1 tsp mixed spice

½ tsp ground ginger

½ tsp baking powder

180 ml milk

6 oz courgette, grated

4.5 oz raisins
