Date, Pecan and Oat Slice recipe – sugar free, vegan and fat free

An easy recipe and quick too if you think to soak your dates in advance – overnight is fine, orIMG_20151116_125034325 over 24 hours as mine were today.
Naturally sweet and because of the oats it is quite filling too.

9 oz (250 g) dates

10 fl oz (300 mls) boiling water

4 oz (115 g) self raising flour

6 oz (170 g) oats

1 tsp baking powder

3 oz (75 g) pecans – crumbled by hand, as large or small as you like

Pop the dates and boiling water in a medium sized bowl to soak for at least 3 hours.

When you are ready to finish making them, preheat your oven to 180°C, Gas Mark 4, 350°F and get your tin ready.   My tin is 8.5″ (22 cm) square, but a slightly smaller one would work really well too. I also use a silicon tray in a metal one so that I do not need to grease it.

Mash your soaked dates with a fork and add the other ingredients.  Give them a quick mix with a wooden spoon or spatula to make sure that all the oats are coated with the wetter mix.  Spoon into the tray and level out with the back of a spoon or spatula.

Put in the oven for 20 minutes, or until you can smell them cooking and they are firm to touch.  Cut them into 16 pieces whilst they are still warm and enjoy with a lovely warm cup of something!
