Non-Chocolate Blondies

DSC_0476A perfect way to use up left over Glace icing, or just a lovely gooey treat to make – Non-chocolate Blondies

4 oz butter (lightly salted)

6 oz icing sugar

6 tbsp warm water (or enough to make the icing into a thick paste)

3 eggs

6 oz self raising flour

1 tsp baking powder

Melt the butter slightly in the microwave – be careful not to burn it

Add the glace icing (or the water and icing sugar separately if not using left overs) and beat

Add the flour, eggs and baking powder and give another good beat.

Poor into a greased and lined 8′ square tin, or a silicon one in a metal tin if you have one like me.

Bake for 20 mins at 180°C (160°C fan) mark 4 and then turn down to 160°C (140°C fan) mark 3 for a further 20 mins.

Leave to cool slightly before cutting into squares.

I served mine this evening to friends with Roasted Rhubarb, straight from the garden…. mmmmmm.

Having asked my husband to take a photo, I am now chuckling as I see that he has taken it from the perspective of someone just about to tuck into their seconds (hence the dirty plate) with the plate on their lap….. comfort food at it’s best.
