I saw something on the beeb website last night, and it seemed that I had wrongly been saying that I’m giving you ‘Jam’ Recipes! It seems that there is an official definition for what is too much, or too little sugar to call something a jam. On second reading it seems that you cannot sue me for false advertising as the natural fruit sugars are calculated within the percentages…. phew! Most of the jam that I make is equal fruit to added sugar weight, so I can in fact call it jam! Phew.
On another note – only 4 courgettes today!
We popped to the allotment yesterday to dig up some more new potatoes, prune the cherry tree, pull some beetroot, and ….. you’ve guessed it, pick some courgettes! Only 6 yesterday, so it seems to be slowing down a little.
In a flurry of inspiration today and a little experimentation, Courgette and Lemon Drizzle Cake was made and swiftly followed by Tomato and Courgette Soup.
We had to make a second Courgette and Lemon Drizzle cake as the first one was snuffled down pretty quickly by some lovely friends. The second one was only partially eaten straight away, and I don’t think tastes quite as nice the next day (but then I am a bit of a perfectionist – those who shared it with us seemed to like it ). And all of our family loved the soup that was made by my husband and eldest daughter – they should get the credit for making it after my whimsical suggestion that we could use up some more courgette in it!!
That’s basically it, I just thought it deserved a woohoo! And since I started it 18 months ago, people have clicked on it from 79 countries in the world.
That and I’m on google now…. oh, have I already mentioned that.

Having not been to the allotment for a few days as I’d been visiting my best friend from YEARS ago, we just went to the allotment and picked up a further 10 courgettes of varying sizes from the allotment. That’s to top up the 8 that are already in the fridge!! Since I’ve got back, I’ve made the Courgette and Raisin Muffins and Courgette Bread Rolls, but I split it up into 15 round rolls, popped them on to a full size baking tray, and they are cooking away as I type. I’ll have to take a few of them to church tomorrow to share the blessing, and then make some chutney next week!
I’m Rachel, a stay at home mum (most of the time) who doesn’t like to have idle hands! So if I’m sat watching tv with my hubby, or on a journey in the car where I’m not driving, I’m usually knitting or crocheting something.
I’ve got 4 beautiful girlies, and a pretty special hubby. I love gardening, allotmenteering, and spending time with friends and family.
